Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Gap beneath middle door with metal bent back and light showing thru.
36-71-4    Basic - Floor drains/drain covers heavily soiled. Soiled floor drains in dish area and kitchen. **Repeat Violation**
36-18-4    Basic - Floor tiles cracked, broken or in disrepair. Broken and cracked floor tiles in north wait station. Tiles cracked in kitchen area.
33-19-4    Basic - Garbage on the ground and/or pad around dumpster. Tree trimming debris around dumpster.
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment kitchen floor grease behind fryers. **Repeat Violation**
51-18-6    Basic - No copy of latest inspection report available.
36-72-4    Basic - Walk-in cooler/walk-in freezer floor soiled. Walk in freezer floor food debris.
16-60-1    Basic - Warewashing machine not automatically dispensing the sanitizer. Dish washing machine 0ppm chlorine.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Multiple mop buckets full of water with mops in the water.
21-38-4    Basic - Wiping cloth sanitizing solution stored on the floor. Sanitizer bucket on the floor in kitchen 3 compartment sink area. Manager corrected to shelf. **Corrective Action Taken**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. 6 Dented cans of cream of mushroom soup.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. 0 ppm at dish machine. **Repeat Violation**
35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. 1 fly in the north wait station area. 1 fly in walk in cooler. 1 fly in buffet salad station area. 8 flies in south service soda fountain area. 15 flies near south door in dining room. **Repeat Violation**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. cut lettuce (70°F - Cold Holding); deviled eggs (69°F - Cold Holding); blue cheese (70°F - Cold Holding); cubed ham (70°F - Cold Holding) in salad area of buffet no date mark or time mark on these items. . Manager discarded all items and time stamped new items.
35A-09-4    High Priority - Presence of insects, rodents, or other pests. 5 Dead flies in ice machine door area. Manager cleaned area and discarded flies. **Corrective Action Taken**
35A-04-4    High Priority - Rodent activity present as evidenced by rodent droppings found. Too numerous to count rodent droppings in buffet salad bar cabinet, able to reach 5 droppings 1 was soft 4 were hard. 8 semi soft rodent droppings under next salad bar area, 9 hard rodent droppings on the floor under buffet line salad dressings, 2 dry droppings under fresh fruit area of buffet, too numerous to count rodent droppings under steam table with rice and veggies, 11 dry rodent droppings under crackers and soups buffet area, 10 hard rodent droppings under steam table, 1 semi soft rodent dropping in steam table area, 7 unreachable rodent droppings under cabinet left of grill. 2 rodent droppings in cabinet under dessert buffet, 6 semi soft rodent droppings in garbage room near mop sink. 6 hard rodent droppings on exterior delivery platform. 24 semi soft to hard rodent droppings on fence in dumpster area. **Repeat Violation**
22-20-4    Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. Ice machine in north wait station mold like debris interior of ice machine.
22-24-4    Intermediate - Accumulation of black/green mold-like substance on/around soda dispensing nozzles. Mold like debris on soda nozzles in north wait station.
31A-13-4    Intermediate - Employee used handwash sink as a dump sink. Hand wash sink used as a dump sink in north wait station area soda in hand sink.
03D-16-4    Intermediate - Potentially hazardous (time/temperature control for safety) food covered while cooling. All cooling items in walk in cooler covered. Manager vented all items.
