Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-01-4    Basic - Bowl or other container with no handle used to dispense food. Observed that a plastic bowl is being used as a scoop for duck sauce.
21-05-4    Basic - Cloth used as a food-contact surface. Observed a cloth is covering bean sprouts in the walk-in cooler. The sprouts were recovered with plastic wrap. **Corrected On-Site**
21-08-4    Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed 0 ppm when tested. It was corrected to 200 ppm .
03A-15-4    High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Observed all food in the larger cook line flip top cooler is 52°F or higher. All the food was moved to another working reach-in cooler. **Repeat Violation**
08A-17-5    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in walk-in freezer - all products not commercially packaged. Raw chicken, packed on site, above raw beef. All the chicken was properly restored. **Corrected On-Site**
14-77-5    Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Observed all food in the larger cook line flip top cooler is 52°F or higher. All the food was moved to another working reach-in cooler. **Repeat Violation**
