Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use wet wiping cloth/towel used under cutting board being used to cut pineapple. The cloth was removed and replaced with a rubber mat. **Corrected On-Site** **Warning**
High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Observed all food in the pantry rear reach-in cooler is 45°F or warmer. All food was moved to the walk-in cooler. **Corrective Action Taken** **Warning**
High Priority - Heat strip failed to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. **Warning**
Intermediate - Identity of food or food product misrepresented. Observed menu advertising locally sourced organic greens. Observed some boxes of regular greens and some boxes of organic greens that come from California. Restaurant menu advertises "free range" chicken. Establishment does not not have any "free range" chicken on site and no recent invoice invoices to show that "free range" chicken was purchased. A callback inspection will be conducted on 8/24/17. **Warning**
Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/dbpr/hr/food-lodging/managercertification.html. Observed 5 employees working with food and no certified food manager present. The only certified food manager for the establishment is the Chief Engineer. **Warning**
Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired.
Observed all food in the pantry rear reach-in cooler is 45°F or warmer. All food was moved to the walk-in cooler. The internal ambient thermometer read 48°F. **Corrective Action Taken** **Warning**
