A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Equipment and utensils not properly air-dried - wet nesting. Observed in pan where lids are stored. Manager corrected wet nesting. Changed pan for dishes to dry properly. **Corrected On-Site** **Warning**
High Priority - Employee washed hands with cold water. Observed employees washing hands in cold water. Manager advised employees to use back sink. **Corrective Action Taken** **Warning**
High Priority - In-use utensil stored in unclean water at or above 135 degrees. Dipper well not draining properly. Manager discarded the dipper well and put tray for utensils to sit in. Utensils will be changed out after each shift until dipper well can be fixed. **Corrective Action Taken** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Observed rice and beans, and regular rice being hot held below 135°F. Product were not in the hot held unit long. Manager increased the heat on the unit and the temperatures came up to 135°F or higher within 15 minutes. **Corrective Action Taken** **Warning**
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Observed screw driver and spatula in handwash sink by 3 compartment sink. **Corrected On-Site** **Warning**
Intermediate - Hot water not provided/shut off at employee handwash sink. Observed at handwash sink by steam table, and men's restroom water temperature not coming up to 100°F **Warning**
