illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

At reach in cooler on make line observed ambient air temperature at 52°F. Observed the following temperatures: Philly cheese steak ; Beef (53°F - Cold Holding) cheesecake filling ; Dairy (50°F - Cold Holding) and hot dogs ; Beef (52°F - Cold Holding). On make line at top portion of cooler: observed sliced tomatoes ; Plant Foods (63°F - Cold Holding) shredded lettuce; Plant Foods (47°F - Cold Holding)**Repeat Violation** **Repeat Violation** **Admin Complaint** - From follow-up inspection on 2017-08-12: Observed ambient air temperature at reach in cooler on make line at 47°F. Observed philly steak meat cold holding on ice at 40-46°F and Cheesecake filing being cold held on ice at 45-49°F. Advised operator to completely submerge food in ice so that food height is at the same level of the ice. Per operator, food was placed in reach in cooler under make line at approximately 9am. No line checks had been performed on he day of the inspection. Advised certified food manager to monitor the temperature of the food hourly as food is being held on ice.
