Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-01-4    Basic - In-use utensil in nonpotentially hazardous (non-time/temperature control for safety) food not stored with handle above top of food within a closed container. Scoop in sugar container on bottom shelf in prep room. Manager removed. **Corrected On-Site**
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface in 3 door cooler at cookline.
14-12-4    Basic - Utensils in poor condition. Can opener rusted.
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. 1) Sour cream overstacked (43-47°F) held overnight. Manager discarded. SEE STOP SALE. 2) Cooked chicken (42-47F°F) overstacked in 3 door flip top cooler since 9am. Manager moved overstocked portion to alternate cooler. **Corrective Action Taken**
08A-02-5    High Priority - Raw animal food stored over or with ready-to-eat food in walk-in freezer - not all products commercially packaged. Raw salmon stored over bread and muffins. In walk in freezer. Manager moved and properly stored. **Corrected On-Site**
08A-20-4    High Priority - Raw animal foods not properly separated from each other in holding unit. 1)Raw chicken stored above shrimp and burgers in 2door meat cooler. 2) Raw eggs stored over ground beef. Items moved and properly stored. **Corrected On-Site**
12A-02-4    High Priority - Server handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. 1) Server picked up dirty dishes and handled money, then proceeded to make and garnish drinks without washing hands. 2) Server took paper off straws and touched unwrapped straws to put into drinks without washing hands.
