Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit....roasted tomato, ham, cold cut meat, provolone cheese, mozzarella cheese , blue cheese all at 57°-63° in flip top reach in cooler next to reach in freezer at cook line . Per operator food being held more than four hours. Stop sale issue . Operator discarded food at time of inspection........ham 46°, turkey 45°, cheese 44°, Marsala sauce 48°, linguine 48°, fettuccine 49°( other TCS food 43°) in walk in cooler . Pic stated cooler was shutting down for an hour cause ice buildup around the fan . Ambient temperature 38° at time of inspection. Pic open inside walk freezer door to cool down food.....butter 46°, egg wash 47° in flip top cooler next to steam table at cook line . Per operator food being held less than 4 hours, pic moved food to bottom cooler at time of inspection.....meat balls, sausages , cut tomato all at 45°-46° in cold hold table at pizza station being held less than 4 hours.
