Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-75-4    Basic - Build-up of soil/debris on the floor under equipment. Cook line floor under equipment has a build up of soil, water, grease, and food debris.
10-08-4    Basic - Ice scoop handle in contact with ice. Multiple scoop handles in contact with ice.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Two tongs hanging on oven door, manager move to utensil storage. **Corrected On-Site**
25-05-4    Basic - Single-service articles improperly stored. Single service cups on floor of service area.
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. Bucket at service counter Sanitizer Bucket (Chlorine 400+ppm). Manager added water. **Corrective Action Taken**
28-34-1    High Priority - Establishment increased seating without municipal sewer approval. Restaurant licensed for 72 seats, 84 seats in dining area. Manager instructed employee to remove 12 chairs. **Corrected On-Site**
03B-01-4    High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Soup on cook line: soup (98°F - Hot Holding). Manager placed in walk-in freezer to rapidly chill. **Corrective Action Taken**
08A-10-4    High Priority - Raw animal food stored over ready-to-eat food in reach-in cooler. Raw pork stored over cut vegetables, manager moved pork to bottom shelf. **Corrected On-Site**
41-02-4    High Priority - Toxic substance/chemical stored by or with food. Food cases stored with bleach, manager instructed employee to move food cases to dry stock, he complied. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Bib on cook line missing back flow.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Kitchen hand wash sink missing towels.
