A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. **Warning**
Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Observed chicken thawing at room temperature in kitchen area. **Warning**
High Priority - Cooked potentially hazardous (time/temperature control for safety) food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed curry goat (52°F) beans (46-47°F - Cold Holding); cooked cow foot (49°F - Cold Holding) stored in the reach in cooler on 04/22/18 at 4:30 pm stated the operator. **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed 3 flies at front counter, 5 flies at kitchen by the dry storage area in kitchen. **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above, fried dumpling 99°F stored above liver at steam table for 2 hours. **Warning**
High Priority - Raw animal food stored over cooked food. Observed raw chicken stored above yogurt in the freezer and raw chicken stored above cooked beans in the reach in cooler. **Warning**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Observed curry goat (52°F - Cold Holding); curry chicken beans (46-47°F - Cold Holding); cooked cow foot (49°F - Cold Holding); stored in reach cooler on 04/22/18 at 4:30pm. **Warning**
High Priority - Toxic substance/chemical stored by or with food. Observed bleach, soap and sanitizing bucket stored above and next cooked chicken and jerk pork, plants at prep table in the kitchen area. **Warning**
