Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.

In main prep cooler - pasta 64°, sausage 60°, chicken 60°, sausage 60°, cheese 60°, ham 60° instructed manager to move items to walk in cooler. Manager stated all items have been in cooler only 1 hour. Manager moved items to walk in during inspection. **Warning**
High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized.
Quat triple sink less than 100 ppm **Warning**
High Priority - Sewage/wastewater backing up through floor drains.
Standing water observed in drain. Hand sink next to pizza cooler water has been shut off, according to manager drain backs up and overflows onto floor next to pizza prep cooler when hand sink is running **Admin Complaint**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse.
Pasta 64° in cooler over night according to manager **Warning**

Reach in cooler ambient 70° across from pizza oven, door on right side is not sealing, manager stated cooler is leaking and said a new one is being brought in tonight. **Warning**
