A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers above a steam table on the cooks line and also observed another set of lights are covered but are missing the rubber end caps. Observed set of ceiling lights are not covered in the dry food storeroom. **Warning**
High Priority - All potentially hazardous (time/temperature control for safety) foods in drawers opposite the fryers on cook line cold held at greater than 41 degrees Fahrenheit. Observed raw bacon at 50-52F and fully cooked sausage links at 47-50F . Bacon was moved to the walkin cooler. Sausage links were put on a stop sale. **Repeat Violation** **Warning**
High Priority - Stop Sale issued due to adulteration of food product. Observed drink ice is in standing water in the ice bin of the soda machine in the waitress station. **Warning**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Fully cooked sausage stored more than 4 hours in non working reachin cooler drawer. **Warning**
Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans, plan review application and payment for plan review to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Was not complied on Post Conference case 2017056135. Verified by speaking with Plan Review in Tallahassee that no plans have been submitted. Will grant 30 days to allow for the ownership to submit plans to Plan Review in Tallahassee. A Plan Reviewer will call the owner Russ Lobello at 561-961-9644 to explain how to submit plans. **Repeat Violation** **Warning**
