A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area.
Over 2 dozen live flying insects found swarming over the 6 yogurt machines in kitchen.
Over 1 dozen flying insects observed flying around the kitchen area.
Over 1 dozen flying insects observed swarming around dry storage shelf in back kitchen area.
Approximately 6 Flying insects found on topping bar at front counter inside pans of fresh cut Pineapple, chocolate covered pretzels, chocolate covered cone pieces and chocolate covered strawberries.
Approximately 6 flying insects found swarming around dispenser levers on front of yogurt machines on dining room side.
Over 1 dozen flying insects swarming in dining room area.
Over 50 dead flying insects found on bottom shelf of 3 door reach in refrigerator in kitchen.

Intermediate - Employee has not received adequate training related to their assigned duties as evidenced by lack of general knowledge in performing their assigned duties.
Chelsea unable to answer questions on proper wash, rinse sanitize warewashing utensils and proper sanitizer soulution levels. **Repeat Violation**
Intermediate - No quaternary ammonium chemical test kit provided when using quaternary ammonium chemical sanitizer at three-compartment sink/warewashing machine. **Repeat Violation**
