The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : Observed: Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. In main prep cooler - pasta 64°, sausage 60°, chicken 60°, sausage 60°, cheese 60°, ham 60° instructed manager to move items to walk in cooler. Manager stated all items have been in cooler only 1 hour. Manager moved items to walk in during inspection. **Warning**
Priority: High Priority - From follow-up inspection 2017-11-08: In Pizza cooler - feta 51°, ham 49°, sausage 48°, cheese 49°, pasta 46°, sausage 42°, chicken 42° unit is new from today, cooler was turned down during inspection. **Admin Complaint** - From follow-up inspection 2017-11-13: In reach in prep cooler- salami 53°, chicken 46°, sausage 46°, ham 46°, chicken 44°. Recommended keeping top of prep area fully stocked with containers so there is less air flow out of unit.
