Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-01-4    Basic - Bowl or other container with no handle used to dispense food. Observed in the kitchen, rice containers with metal can inside, operator removed and discarded cans during the inspection. **Corrected On-Site**
23-25-4    Basic - Build-up of grease/dust/debris on hood filters.
36-75-4    Basic - Build-up of soil/debris on the floor under shelving. Observed throughout the entire establishment walk in cooler, walk in freezer, and kitchen shelves with build up.
51-11-4    Basic - Carbon dioxide/helium tanks not adequately secured. Observed inside the storage room, tanks not secured.
08B-46-4    Basic - Case/container/bag of food stored on floor in dry storage area. Observed plastic containers of oil and a bag of onions stored on the dry storage floor.
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed clean pots on the stored in the floor of the kitchen walk in freezer.
14-11-4    Basic - Equipment in poor repair. Observed juice making machine with the top cracked at the front counter. **Repeat Violation**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Front double door has gap.
08B-12-4    Basic - Food stored in holding unit not covered. Observed ice cream cafeteria area not covered.
33-19-4    Basic - Garbage on the ground and/or pad around dumpster. Observed card board boxes in the back of enclosure on the ground.
23-07-4    Basic - Gaskets with slimy/mold-like build-up. Observed all gaskets reach in coolers with slim/ mold like build-up
36-24-5    Basic - Hole in or other damage to wall. Observed hole in the wall in cafeteria area underneath coffee machine. Observed in the kitchen n
14-69-4    Basic - Ice buildup in reach-in freezer. Observed ice build up in the chest freezer near back door and the chest freezer at the front counter with heavy ice build up. **Repeat Violation**

21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board.
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Observed in the kitchen area, missing two light shield.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed reach in cooler and the front counter and the reach in cooler in front of the toaster machine with no ambient temperature thermometer. **Repeat Violation**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed in the men's restroom and the unisex restroom with no hand washing sign. **Repeat Violation**
33-16-4    Basic - Open dumpster lid.
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair.Observed in the kitchen, reach-in cooler gasket torn, in front next to the walk in cooler. **Repeat Violation**
33-31-5    Basic - Unnecessary items/unused equipment on the premises. Observed inside the unorganized outside store room unused equipment , lawn equipment, and tools inside.
36-02-5    Basic - Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom. **Repeat Violation**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface.
36-72-4    Basic - Walk-in cooler/walk-in freezer floor soiled. **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed the kitchen walls, soiled.
29-15-4    Basic - Waste line passing through ice machine or ice bin. Observed in the outside bar, waste line hoses inside the ice bin.
29-03-4    Basic - Water draining onto floor surface. Observed in kitchen, water hose draining water to the floor, no spray nozzle.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed throughout the kitchen, wiping cloths not stored in sanitizing solution. **Repeat Violation**
08B-02-4    High Priority - Displayed food not properly protected from contamination. Observed bread in a container with a white wet cloth on top. Employee removed cloth and discarded bread the cloth was covering. **Corrected On-Site**
29-04-4    High Priority - Nonfood-grade hose conveying potable water. Observed in the kitchen, black nonfood- grade hose connected to put water inside big pots next to the oven
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed in reach in cooler in the kitchen next to the back door, tuna salad (50°F - Cold Holding) and chicken salad (49°F - Cold Holding) As per operator, tuna salad and chicken salad was left in reach in cooler overnight.
03B-01-4    High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Observed at the cafeteria, beef empanada (98°F - hot holding)operator discarded during inspection. **Corrected On-Site**
01B-02-4    High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse.Observed in reach in cooler in the kitchen next to the back door, tuna salad (50°F - Cold Holding) and chicken salad (49°F - Cold Holding) As per operator, tuna salad and chicken salad was left in reach in cooler overnight.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed in the kitchen next to the oven, used to put water inside pots without vacuum breaker.
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
01C-03-4    Intermediate - Clam/mussel/oyster tags not marked with last date served.
01C-02-4    Intermediate - Establishment not maintaining clam/mussel/oyster tags for 90 days.
31A-02-4    Intermediate - Handwash sink not accessible for employee use due to being blocked by serving tables. **Repeat Violation**
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products.
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked.as per operator, some foods were prepared 2 days ago. **Repeat Violation**
22-07-4    Intermediate - Slicer blade guard soiled with old food debris.
