A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Basic - Interior of oven has heavy accumulation of black substance/grease/food debris. Food debris found inside pretzel machine on back kitchen counter. **Repeat Violation**
Basic - Wet mop not stored in a manner to allow the mop to dry.
Wet mop found stored on floor next to mop sink. PIC properly stored mop. **Corrected On-Site** **Repeat Violation**
Basic - Working containers of food removed from original container not identified by common name. Container filled with pretzel salt found unlabeled. PIC labeled container
High Priority - Dead, small flying insects in kitchen, food preparation area, or food storage area.
7 dead flying insects found inside right side bottom shelf of 3 door reach in cooler
1 dead flying insect found inside bag of sugar on back prep counter next to pretzel oven.
6 dead flying insects found on dry goods 2nd shelf in back kitchen.
No live flying insects observed in operation.
