A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - Food being stored and prepared outside under a tin roof.
Potatoes being cut into french fries outside behind building, potatoes and fryer oil being stored outside behind building along with three reach in cooler's, an ice machine, single service items. Operator has been educated on the risks of preparing and storing food outside and has plans to only prep fries inside from now on and store all foods and single service goods inside dry stock room. ice tea machine hard plumbed outside in back of building. Cook said they make ice tea there in the morning. **Corrective Action Taken** **Admin Complaint** - From follow-up inspection 2017-12-13: ice tea machine still outside behind restaurant. Food and single service items have been moved into dry stock. Observed no outdoor food prep at callback inspection. **Admin Complaint** - From follow-up inspection 2018-03-21: observed cases of potatoes and bags of sugar being stored outside on rack behind restaurant. **Admin Complaint**
