A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - - From initial inspection : Basic - Employee (cooks) with no hair restraint while engaging in food preparation. **Warning** - From follow-up inspection 2018-04-03: **Time Extended**
High Priority - - From initial inspection : High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. At wait station cooler, Observed the following temperatures: Whole milk ; Dairy (50°F - Cold Holding). Advised operator to relocate food when unit is open for long periods of time as operator stated unit was restocked with beverages over period of time. Observed temperature at unit decrease to 38°F at conclusion of inspection. **Repeat Violation** **Warning** - From follow-up inspection 2018-04-03: At glass front Coca Cola cooler, observed Observed ambient air temperature at 43°F. Observed the following temperatures: whole milk 48°F, butter 45°F, commercially prepared sliced sausage 45°F. Per operator, unit had recently even stocked with beverages. Operator stated food temperatures rose per unit being open. Advised operator to store potentially hazardous food items in coldest area of cooler.**Time Extended** **Time Extended**

All certified food managers for establishment certifications expired. Advised operator that all food manager certifications were expired. Advised operator of acceptable food manager programs verbally and in writing. Advised operator retake food manager assessment.
