Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
14-38-4    Basic - Food storage container/container lid cracked or broken. Blue bins in walk in freezer cracked and broken, exposing frozen foods.
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment
36-47-5    Basic - Hood soiled with accumulated grease, dust or food debris. Several areas throughout facility.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses.
10-06-4    Basic - In-use utensil not stored with handle above the top of potentially hazardous (time/temperature control for safety) food and rim of the container. Several locations in kitchen
36-57-4    Basic - Portable fan had accumulation of dust/debris-3 bin sink.
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair-cookline at back kitchen.
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. Bowls at buffet line. **Corrected On-Site**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Wall splattered with various sauces.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Tested at 0 parts per million. Advised to set up sanitizer to manually sanitize washed dishes. Manager called for service.
12A-08-4    High Priority - Hot water takes too long to reach handwash sink resulting in employees using only cold water to wash their hands.
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food-walk in cooler
08A-20-4    High Priority - Raw animal foods not properly separated from each other in holding unit. Raw chicken over cut veggies. Walk in cooler. **Corrected On-Site**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Cooling rack pushed in front of sink. **Corrected On-Site**
05-06-4    Intermediate - Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit.
47-03-4    Observed electrical wiring in disrepair. Electrical/switch plate near three bin sink broken and a pen space observed.
