Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-24-5    Basic - Hole in or other damage to wall. Under dishwashing machine area.
14-31-4    Basic - Nonfood-grade bags used in direct contact with food. Raw pork in a to go bag in the reach in freezer. **Repeat Violation**
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. Reach in cooler in front of stove.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. In front of stove.
23-09-4    Basic - Soiled reach-in cooler gaskets. Next to door entrance door.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Clear container with curry powder.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
10-05-4    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. On preparation table.
08A-01-4    High Priority - Raw animal food stored over cooked food. Observed raw chicken over cooked pork. **Corrected On-Site**
03A-03-4    High Priority - Shell eggs held in a unit maintaining an ambient air temperature greater than 45 degrees Fahrenheit. Operator transferred to walk in cooler for a rapid cooling.
11-07-4    Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Printed operator a copy of the big 5.
22-28-4    Intermediate - Interior of reach-in cooler soiled with accumulation of food residue, Reach-in cooler shelves soiled with food debris. In front of stove, Interior of microwave soiled with encrusted food debris. **Repeat Violation**
