Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Cooks line and oyster bar
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Cups at the bar, manager removed and sent back to the dish room. **Corrective Action Taken**
14-11-4    Basic - Equipment in poor repair. Gap in the oyster bar trough.
36-22-4    Basic - Floor area(s) covered with standing water.
36-71-4    Basic - Floor drains/drain covers heavily soiled. Dish room and tiles missing around the floor drain.
36-18-4    Basic - Floor tiles cracked, broken or in disrepair. And other area floor tiles missing.
08B-12-4    Basic - Food stored in holding unit not covered. In walk in freezer crab legs removed from original case, not covered in container used to hold.
23-07-4    Basic - Gaskets with slimy/mold-like build-up. Reach in and walk in units.
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Corrected by manager **Corrective Action Taken**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses.
22-19-4    Basic - Interior of microwave soiled with encrusted food debris. Cleaned by manager. **Corrective Action Taken**
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Up right reach in cooler near prep area and wait station make table, corrected by manager.
29-49-5    Basic - Observed standing water in bottom of reach-in cooler.wqit station make cooler close to office.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Small make table on cooks line. **Repeat Violation**
23-05-4    Basic - Soil residue build-up on nonfood-contact surface. Under the lids to the make tables, old food drebris.
14-41-4    Basic - Walk-in cooler gasket torn/in disrepair. Walk in cooler **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Wait station walls in need of cleaning. And wall in need of repair near office.
