Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cardboard used to line food-contact shelves. Observed soiled cardboard used on shelving were slicers and meat tenderizer equipment area kept. Observed a food employee tenderizing conch on shelving were cardboard is observed.
Basic - Case/container/bag of food stored on floor in walk-in cooler/freezer. Observed black containers, containing coleslaw stored on floor of walk in cooler. Also observed several containers of raw chicken wings stored on kitchen floor in front of three compartment sink. **Corrective Action Taken**
Basic - Employee personal items stored in or above a food preparation area. Observed an open bottled beverage container, keys and lighter located on top of prep counter where bags of bread and food container trays area kept. **Corrected On-Site**
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Located near warewashing area towards back of kitchen. **Repeat Violation**
Basic - Single-service articles improperly stored. Observed boxes of plastic cups and insulated cups stored on floor of hallway area near restroom area of establishment.
Basic - Single-service articles not stored inverted or protected from contamination. Observed stripped red and white food containers not inverted. **Corrected On-Site**
Basic - Ten (10) foot-candles of light at least 30 inches from floor not provided in walk-in cooler. Observed no lighting provided inside walk in cooler, needed flashlight to observed items inside cooler unit.
High Priority - Cooked potentially hazardous (time/temperature control for safety) food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed chicken breast (70°F-77°F - Cooling from approximately 1pm;checked at 3:30). Instructed the operator to remove chicken from reach in cooler and place inside walk in freezer.
High Priority - Food/ice received from unapproved source/no invoice provided to verify source. Operator unable to provide proper invoice regarding the coconut, red velvet and strawberry cakes sold in individual containers lacking proper information or source on where cakes were made/purchased. Located near front counter area of establishment.
High Priority - Operating with an expired Division of Hotels and Restaurants license. At the time of inspection observed seating restaurant open to the public and engaged in food preparation and service operating with an expired license with an expiration date of October 1, 2018. **Admin Complaint**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed coleslaw (56°F - Cold Holding) located in a container holding at room temperature on top of prep counter near front counter area.
High Priority - Stop Sale issued due to food originating from an unapproved source. Operator unable to provide proper invoice regarding the coconut, red velvet and strawberry cakes sold in individual containers lacking proper information or source on where cakes were made/purchased. Located near front counter area of establishment.
Intermediate - Accumulation of pinkish/black mold-like substance in the interior of the ice machine. Located behind front counter. **Repeat Violation**
Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. None provided at the time of inspection.
