Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-17-4    Basic - Walk-in cooler shelves with rust that has pitted the surface.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses.
03A-08-4    High Priority - Cooked meat/poultry cold held at greater than 41 degrees Fahrenheit. Observed turkey at 44°; beef 44° at front line cooler. Operator covered unit. **Corrective Action Taken**
12A-27-4    High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Employees touch clean utensils and ready to eat foods after cracking shell eggs, without washing her hands. **Corrected On-Site** **Repeat Violation**
08A-07-4    High Priority - Raw animal food not properly separated from ready-to-eat food. Observed raw shell eggs not properly separated from Ready to eat foods in front line cooler. **Corrected On-Site**
22-20-4    Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. Observed black mold like substance inside ice machine. **Repeat Violation**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
