Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-01-4    Basic - Employee chewing gum while preparing food. Employee cutting lettuce and setting up cook line chewing gum.
33-19-4    Basic - Garbage area soiled. Debris/buildup on ground around dumpster area.
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. On prep table in kitchen area. Under cuttingboard that employee was using to cut lettuce. Item moved during inspection **Corrected On-Site**
06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Chicken thawing at room temperature in prep sink in kitchen area.
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. Reach in cooler gasket torn on stand up reach in cooler.
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee cutting lettuce with bare hand. Spoke with employee, employees placed on gloves. **Corrected On-Site**
35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed 3 live flies inside kitchen area on cook line. Employee began killing flies. Number of observed flies reduced to 1 Observed 6-7 live flies inside storage shed. Stored shed is located outside of back door next to dumpster area. Storage shed contains storage freezers, 2 cases of single service napkins.
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw beef and raw shrimp stored on shelf above cheese in stand up reach in cooler. Also, chicken wings not in the original unopened commercial package stored of glasses in stand up reach in freezer.
53B-14-5    Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One expired.
