A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Case/container/bag of food stored on floor in dry storage area. Observed a plastic container of oil stored on floor located at dry storage area. **Warning**
Basic - Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Observed dishwasher wash dishes on middle compartment without sanitizing dishes. **Corrective Action Taken** **Warning**
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Located near dry storage room and near cookline. **Warning**
Basic - Reuse of single-service articles. Observed milk jugs reused to store agua de jamaica (Hibiscus tea-like beverage), located at reach in cooler behind front counter. **Warning**
Basic - Unwrapped single-service utensils not presented so that only the handles are touched. Observed forks not inverted located on top front counter area. **Corrected On-Site** **Warning**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Observed insect-like flies crawling inside a small container of corn. **Corrected On-Site** **Warning**
Intermediate - Food manager certification expired.
