Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean equipment/utensils not stored at least 6 inches above the floor. Observed big pots on the kitchen floor. Manager put pot in 3-compartment sink to be washed. **Corrected On-Site**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee cup on preparation table. Employee discarded cup.
Basic - Single-service articles stored outside or in a room/shed that is not fully enclosed (open to outdoors/screened). Observed outside dry storage room no fully enclosed.
Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed bucket at cafeteria side with a chlorine solution at 0 ppm. Manager changed solution to 50 ppm. **Corrected On-Site**
High Priority - Operator unable to provide documentation for source of fish. See stop sale. Observed ceviche by king fish wave company, prepackaged without receipt or proof of parasite destruction. Manager discarded the 3 units available.
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed soft white cheese, at cafeteria front counter, found at 54° f.
High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Observed cooked pork 126° f cooked yuca 118° f salmon 122° f
