Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

51-11-4    Basic - Carbon dioxide/helium tanks not adequately secured. Observed CO2 tanks in drystorage area not secured. **Warning**
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed clean plates on shelf by circuit box stored and not inverted. **Warning**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed exterior door in dry storage area next to pharmacy with gap at bottom of door. **Warning**
05-16-4    Basic - No conspicuously located ambient air temperature thermometer in reach-in cooler. Observed no thermometer in True reach in cooler at front line. **Warning**
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Observed double door glass cooler in kitchen with rusted shelving. **Warning**
08B-17-4    Basic - Unwashed fruits/vegetables stored with ready-to-eat food. Observed unwashed cilantro stored over RTE cooked sausage gravy in three door True cooler. Observed uncovered container of cut lemons on front counter. **Corrected On-Site** **Warning**
41-15-4    Basic - Wiping cloth solution stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed sanitizer cloths and solution stored on top of front line near bag with coffee. **Warning**
12A-27-4    High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed cook crack raw shell eggs and then touch clean plates without washing hands and replacing gloves. Cook was educated on the dangers of not washing hands after cracking eggs prior to touching clean plates. Corrected on site. Observed cooks touch dirty equipment then touch RTE food (toast) without washing their hands and replacing gloves. Observed manager begin working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Observed dish washing employee handling soiled dishes/utensils and then handling clean dishes/utensils without washing hands. **Repeat Violation** **Warning**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed pooled eggs on cookline held at 47°F, as per operator, item placed there at approximately 7am. Cook added more ice in container to expedite the temperature. Corrective Action Taken. Observed noodles being held at 58°F in front line reach in cooler, as per operator, item was cooked yesterday. See Stop Sale. **Corrective Action Taken** **Warning**
01B-02-4    High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Observed noodles being held at 58°F in front line reach in cooler, as per operator, item was cooked yesterday. **Repeat Violation** **Warning**
11-03-4    Intermediate - Certified Food Manager or person in charge lacks knowledge of employee health policy and health requirements. Operator were educate on the big 5 Foodbourne illnesses, a poster of the Foodbourne illnesses and symptoms has been given to the operator. **Warning**
02C-03-4    Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Observed sliced meat from more than 24 hours ago not date marked in upright white freezer in dry storage area. **Warning**
22-22-4    Intermediate - Encrusted material on can opener blade. Observed can opener with old, soiled foreign material built up on blade. **Warning**
31A-07-4    Intermediate - Handwash sink missing in warewashing or food preparation area. Observed multiple hand washing violations during the inspection, establishment lacking a hand wash sink on cook line. The closest handwash sink from the end of cookline is approximately 30 ft, as a result an additional hand washing sink is needed. **Warning**
27-09-4    Intermediate - No cold running water at handwash sink in kitchen next back door. Water temperature at handwash sink exceeds 150F. **Warning**
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed spray bottle with degreaser, unlabeled stored under dishwashing machine. **Warning**
