A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. Observed inside the reach in cooler in the back area, a bowl with no handle is using as scoop for lamb patty. Advised the operator, he removed it. **Corrected On-Site**
Basic - Food not stored at least 6 inches off of the floor. Observed a bag of rice is on the floor by the back storage area. Operator put it up. **Corrected On-Site**
Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed in the front cooler without ambient thermometer. Advised the manager, he put it inside. **Corrected On-Site**
Basic - Nonfood-grade bags used in direct contact with food. Observed in the back reach in freezer, plastic thank you carry out bag with lamb stored inside.
Basic - Wet wiping cloth not stored in sanitizing solution between uses. Advised the operator, he put it in the sanitation bucket. **Corrected On-Site**
Basic - Working containers of food removed from original container not identified by common name. Observed squeeze bottles containing different sauces with no labels.
High Priority - Displayed food not properly protected from contamination. Observed 2 trays of deserts on the front counter not protected from contamination without sneezeguard.
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Observed utensil is inside the hand wash sink. The operator removed it.
Also observed operator washing a tong at the hand wash sink. Advised the operator, he took it to the back. **Corrected On-Site**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed by the back kitchen area. The operator put the paper towel. **Corrected On-Site**
