Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit....heavy cream 50° in drinks cooler , single serve butter 61° ( few of butter ) in glass door door reach in cooler at server station being held more than four hours. Operator stated that by mistake employee stored heavy cream in this cooler . Stop sale issue. Operator discarded food at time of inspection. **Corrective Action Taken** **Repeat Violation**
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above....hot holding chili 119° top part when Operator stirring chili it is 138°-142°. Operator adjusted thermostat at time of inspection. **Corrective Action Taken**
07-08-4    High Priority - Potentially hazardous (time/temperature control for safety) food re-served to customers....single serve butter 61° at glass door reach in cooler . Operator stated that employee brought it up from the customer table without his concern. Operator discarded butter at time of inspection **Corrected On-Site**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food....raw beef brisket above can horse reddish at walk in cooler . Operator moved horse reddish at time of inspection. **Corrected On-Site** **Repeat Violation**
01B-02-4    High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse.... heavy cream 50° in drinks cooler , single serve butter 61° ( few of butter ) in glass door door reach in cooler at server station being held more than four hours.

31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing....rinsed sanitize bucket in handwashing sink at kitchen. Discussed with operator.
