A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Coffee cup (containing coffee) with lid inverted (not sealed) next to microwave on cook line. Manager discarded beverage. **Corrected On-Site** **Repeat Violation** **Warning**
Basic - Employee personal items stored in or above a food preparation area. Cell phone on top of microwave. Cell phone next to microwave on cook line. **Warning**
Basic - Exterior door has a gap at the threshold that opens to the outside.
Walk in freezer located outside. Inspector can visibly see air escaping from inside freezer. **Warning**
Basic - No conspicuously located ambient air temperature thermometer in holding unit. In cooler that holds raw beef. Manager put new thermometer in cooler. **Corrected On-Site** **Repeat Violation** **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Approximately 20 flies in storage room (adjacent to cook line) holding hamburger buns. Flies are landing on packages of buns. Approximately 5 flies on cook line. 1 fly on cook line in cut tomatoes. Approximately 5 flies behind cashier area near soda machine. 2 flies in dish area. 1 fly in hallway near restrooms.
Manager called ecolab. Ecolab came last Sunday to service location. **Corrective Action Taken** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
Raw beef 46°f, raw beef 47°f, raw beef 45°f. Advised manager either move beef or put items on ice. **Corrective Action Taken** **Repeat Violation** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Cut lettuce and cut tomatoes on time hold.
Per manager cut lettuce has 4 hour time hold. Cut tomatoes have 6 hour time hold.
Employees stated that food items were put on the line at 8:00am. Manager put appropriate time stamps on products. **Corrected On-Site** **Warning**
High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized.
Quat sanitizer 0 ppm. Test strip failed to turn color. Used both inspector's test strips and establishment's. Small white cutting board, knives, and pans in sanitizer.
Inspector also tried testing with chlorine test strip (0 ppm).
Manager began refilling wash and sanitizer compartments. **Corrective Action Taken** **Warning**
Intermediate - Interior of reach-in freezer soiled with accumulation of food residue. Ice buildup and food debris in bottom of silver Hoshizaki freezer. **Warning**
Intermediate - Wash solution in three-compartment sink less than 110 degrees Fahrenheit. Wash water at 102°f. Dishes actively washing. Manager drained compartment and began refilling. **Corrective Action Taken** **Warning**
