Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-32-5    Basic - Ceiling/ceiling tile shows damage or is in disrepair in the kitchen and above dishwasher.
36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. At kitchen.
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed in ware washing area.
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable.
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed in ware washing area.
36-18-4    Basic - Floor tiles cracked, broken or in disrepair. **Repeat Violation**
33-20-4    Basic - Grease on the ground and/or pad around grease receptacle.
10-17-4    Basic - In-use knife/knives stored in cracks between wall and electrical conduits in walk in cooler.
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Observed in kitchen and ware washing area.
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees.
08B-13-4    Basic - Stored food not covered in walk-in cooler. Observed cooked pork not covered.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses.
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed dented cans of marinara sauce in storage area.
14-15-4    High Priority - Nonfood-grade containers used for food storage - direct contact with food. Obsessed pulled pork stored in non food grade bags in walk in cooler.
03A-06-4    High Priority - Raw meat/poultry cold held at greater than 41 degrees Fahrenheit. Observed sliced turkey found at 50° at reach in cooler at front. As per operator the unit door was left open during storage and preparation. Items are cooling after a while. Ham 46°, cheese 45°, Spanish sausage 45°. An stop sale issued to the turkey slices.
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked Pork from previous day around 9 am.
