Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-22-4    Basic - Floor area(s) covered with standing water. Observed buildup of standing water on floor in walk in cooler. Overflowed from condensation catch buckets. **Repeat Violation**
14-69-4    Basic - Ice buildup in reach-in freezer. Buildup of ice in bottom of white stand up reach in cooler in office area. Some debris noted inside ice.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine registered very low on strip. Manager checked amount in dispenser. Bucket empty. Manager brought Sanitizer in and setup machine. 100ppm at end of inspection. **Corrected On-Site** **Repeat Violation**
50-17-2    High Priority - Operating with an expired Division of Hotels and Restaurants license. License expired 06/01/2018. **Admin Complaint**
08A-21-4    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in walk-in cooler. Raw chicken stored above raw clams. Items moved during inspection. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing on faucet at bottom of mop sink.
01C-03-4    Intermediate - Clam/mussel/oyster tags not marked with last date served. Clam tags.
22-22-4    Intermediate - Encrusted material on can opener blade. Debris noted on can opener blade and on dicer pusher head.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Missing at hand washing sink in kitchen and prep area. Manager immediately refilled. **Corrected On-Site**
53B-14-5    Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One in date employee training certified provided.
