Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. One male busses in kitchen. **Corrected On-Site**
14-11-4    Basic - Equipment in poor repair. Upright cooler in small prep room at rear of facility not in use. Unit filled with various items and personal stuff.
08B-31-4    Basic - Food stored in undrained ice. Various proteins etc in standing water and ice. Advised to use slotted pans etc. to drain ice and water.
14-13-4    Basic - Food-contact surface not smooth and easily cleanable. Facility using cardboard box to cool and drain fried foods.
16-05-4    Basic - Wash and Sanitizing solution not maintained clean.
14-15-4    High Priority - Nonfood-grade containers used for food storage - direct contact with food. Facility prepping vegetables washing and cutting and placing them back in dirty boxes.
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw chicken over cooked potatoes. **Corrected On-Site**
08A-18-5    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in reach-in freezer - all products not commercially packaged. Raw chicken over raw beef in hibachi reach in cooler.
13-06-4    Intermediate - Employee with artificial nails/nail polish working with exposed food without wearing intact gloves. Employee opening sauce jug and pouring into prep type cup. Difficult opening, digging into sealed bottle.
22-22-4    Intermediate - Encrusted material on can opener blade.
14-16-4    Intermediate - Multiuse food-contact surface not smooth, free of breaks/cracks/chips/pits/crevices. Lids to bulk containers observed with cracks.
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked egg rolls, fried shrimp etc, not properly dated.
