Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Cook begin working with food without properly washing his hands. Cook did not used soap when washing his hands. Reviewed proper handwash procedures with operator. **Warning**
12A-12-4    High Priority - Employee switched from working with raw food to ready-to-eat food without washing hands. Observed all cooks handling raw meats and then handling cooked food without washing their hands and sometimes without changing their gloves. Reviewed policy with cooks and operator. After reviewing with them, they washed their hands. A few minutes later they started to do it again. **Warning**
12A-10-4    High Priority - Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Cook keeps touching his face and wiping his face without washing his hands before handling food. Reviewed policy with operator. **Warning**
12A-20-4    High Priority - Employee washed hands with no soap. 1. Observed multiple cooks handled raw meats and then washed hands with just water before handling ready to eat food. 2. 12A-09-4    High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. 1. Observed cooks handling raw meats and then wiping their hands in a soiled towel hanging from their aprons. Cooks constantly wiped soiled hands on soiled towel hanging from apron before handling ready to eat food. 2. Observed cooks drying their hands after washing them on soiled towel hanging from apron. Reviewed handwash procedures with operator, and suggested to removed towels from cooks uniforms. **Warning**

12A-03-4    Intermediate - Employee washed hands in a sink other than an approved handwash sink. Observed cook washed his hands multiple times in three compartment sink before handling food.
