Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-24-5    Basic - Hole in or other damage to wall. Observed near ice machine underneath the counter. Also in storage area door 7224, two holes in the wall underneath prep sink.

35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed 10+ live flies in the storage/preparation area around dicers and slicer machines near walk in freezer.
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Steam table: black beans (97°F - Hot Holding) reheated 169°F; boiled fish (110°F - Hot Holding) reheated 171°F. **Corrected On-Site**
08A-10-4    High Priority - Raw animal food stored over ready-to-eat food. Walk -in cooler: Raw shell eggs stored above cut onions and cut bell peppers. Reach in cooler: raw fish fillets stored above cut lettuce.

27-06-4    Intermediate - No hot running water at three-compartment sink, hand washing sink, and mop sink. Water temperature 76-79°F. Operator checked hot water heater, water temperature at all sinks now 103-108°F. **Corrected On-Site**
51-12-5    Intermediate - No plan review submitted and approved for establishment previously licensed by the Department of Agriculture and Consumer Service or the Department of Health. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Observed establishment has dry storage area in the same complex ( building 7224) with paper goods, canned food, and bottled drinks, prep area, prep sink, two walk in freezers, walk in cooler and hand washing sink.
