Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.
Water 74°, manager turned facet on to be in running water **Corrected On-Site** **Repeat Violation**
Basic - Uncovered food stored near sink exposed to splash.
Pitchers of water in server station no lids under paper towel dispense, manager moved pitchers location **Corrected On-Site**
High Priority - Dented/rusted cans present. See stop sale.
Can of stir fry sauce on dry storage rack, dented on top seam. Manager discarded **Corrective Action Taken**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
First 2-3 times running dish machine tested 0ppm, after running couple times 50ppm **Corrected On-Site**
High Priority - Displayed food not properly protected from contamination.
Front line where guest can walk by: open containers of green onion, celery, cucumber sliced, etc on right and left sides. Talked to manager about leaving lids on containers
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
Tomatillo 61° front line in ice bath, manager added more ice to container **Corrective Action Taken** **Repeat Violation**
High Priority - Raw sewage on ground of establishment.
Out back parking lot near the building. Cat litter observed on ground and grease observed in water puddles. Sluggish/muck also located in area. Manager blocked off 5 parking spots and part of the road with chairs, cones and rope so people cannot walk or drive thru area. **Repeat Violation**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Back flow device needed on Splitter side not going to the chemical box
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink.
