A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
1) pizza sauce (47°F); cheese (47°F); cut tomatoes (48°F); shrimp (49°F); chicken (49°F) in 3 door flip top pizza station cooler. Cook stated foods in cooler since 9am over 4 hours and discarded. See stop sale.
2) tuna salad (51°F); chicken salad (51°F); cut tomatoes (51°F); turkey (52°F); corn (52°F); mozzarella (52°F) in 2 door flip top salad station cooler. Cook stated items in cooler since 9am over 4 hours and discarded. See stop sale.
3) cheese (41-52°F) in flip top cooler by fryer. Cheese was over stacked above cold holding line. Cook stated in cooler less than 2 hours and moved over stacked cheese portions to inside the cooler.
**Corrective Action Taken** **Warning** - From follow-up inspection 2018-10-24: Pizza station cooler ambient 49F. No TCS foods stored in cooler. Salad station cooler not in use and part ordered. No TCS foods to be stored in cooler until repaired
**Time Extended** - From follow-up inspection 2018-12-21: 1)Tomato sauce 51F, cheese 51F, sliced tomatoes, 51F, shrimp 51F in flip top cooler, pizza station. Cheese 52F, turkey 52F, ham 52F. Ambient temperatures 51-52F. Manager stated foods in coolers less than 3 hours. Manager had TCS items moved to alternate coolers and added ice to quick chill.moved to alternate coolers. Do not store TCS foods to be stored in coolers until repaired.
2) Sliced tomatoes 41F and cheese 41F in flip top cooler by fryers.
General manager called for service.
