Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12A-07-4    High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Observed employee handling food items without washing hands before putting on gloves. Another employee handling money, then putting on gloves without washing hands. **Warning**
22-45-4    High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed employee washing metal pans and multiple containers with dish detergent, then placing onto shelf to dry, without sanitizing. After talking with manager, establishment mixes detergent and Quat Sanitizer tablet together. Provided three compartment sink setup poster. Manager setup sink correctly. **Warning**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Previously used (carved) gyro cone sitting out on the counter at 74°F. Leftover cones that are not fully cooked cannot be stored intact a¿¿ they must be sliced, fully cooked and properly cooled. Rice sitting out on counter at 50°F. **Warning**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Two flats of raw shell eggs stored over ready to eat foods in Coca Cola reach in cooler. **Repeat Violation** **Warning**

02B-02-4    Intermediate - Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service. Establishment has covered over consumer advisory at front counter with a menu. Establishment shaves off gyro-cone without a further cook step, unless it looks raw, according to manager. Consumer advisory had been covered over by a menu, on the front display cooler. Provided a new sign, as advisory all ripped and torn. **Corrected On-Site** **Warning**
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked beef in upright reach in cooler. **Warning**
27-17-4    Intermediate - Water pressure lacking at fixture that require the use of water. Hot water at rear kitchen handsink next to stove. **Warning**
45-04-4    Use of cooking equipment producing grease laden vapors/smoke with no hood suppression system installed. Notified Fire AHJ. For reporting purposes only. In back kitchen area, establishment has table top fryer. Wall and ceiling stained with grease build up.
