Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-27-4    High Priority - Basic - Food placed in soiled container/equipment. Onions container has buildup of debris inside container and inside handles.
23-07-4    Basic - Gaskets with slimy/mold-like build-up. Observed buildup on gasket in middle storage cooler in outside shed.
06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Beef in prep sink in kitchen area. Item at room temperature p. Shrimp thawing in standing water. Manager moved item to under running water during inspection. **Corrective Action Taken** **Repeat Violation**

35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed 3-4 small flies in kitchen area. Observed 5-7 flies in hallway next to kitchen area and bathrooms. Observed 2 flies inside outside storage areas. **Repeat Violation**
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Queso cheese 98°. Item on top above steam table. Item reheated during inspection. Item placed out during lunch. Rice 124°. Item on top of steam table. Employee discarded item. **Corrective Action Taken**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw chicken stored above rice, peppers in stand up reach in cooler.
27-16-4    Intermediate - Hot water not provided/shut off at employee handwash sink. Hot water not turned in at hand washing sink next to ice machine. Employee turned sink on. **Corrected On-Site**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
