A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee eating in a food preparation or other restricted area. Employee drinking in dish wash area with no lid on cup , COS , employee discarded cup during inspection. **Corrected On-Site** **Repeat Violation**
Basic - Food stored on floor. Bucket of carrots stored on the floor in prep area as well as boxes of chicken stored in floor in walk-in cooler and walk-in freezer. CAT , inspector went over proper foods **Corrective Action Taken** **Repeat Violation**
High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Observed employee not washing hands prior to placing gloves on , CAT , inspector went over proper hand washing when changing gloves . **Corrective Action Taken** **Repeat Violation**
High Priority - Raw animal food stored over ready-to-eat food. Raw eggs stored over eggplant in walk in cooler , COS , inspector went over proper food storage practices with operator in order to insure cross contamination is not an issue . **Corrective Action Taken** **Repeat Violation**
Intermediate - Handwash sink not accessible for employee use due to being blocked by cart ,end of cooks line , COS employee moved cart during inspection. **Corrected On-Site** **Repeat Violation**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No paper towels at employee hand wash in dishwash area. **Repeat Violation**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked vegetables held over 24 hrs in walk in cooler not date marked . CAT inspector went over the importance of date marking TCS foods held over 24 hrs . **Corrective Action Taken** **Repeat Violation**
