A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Opened water bottle on the prep table by microwave. Operator moved water bottle away from food. **Corrected On-Site** **Warning**
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. By storage area. **Warning**
Basic - Nonfood-contact equipment exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable in dry storage room (exposed wooden shelves in kitchen). **Warning**
Basic - Single-service articles stored outside or in a room/shed that is not fully enclosed (open to outdoors/screened). Boxes of cups, straws, lids, to-go items stored in back shed area that not fully enclosed. **Warning**
Basic - Working containers of food removed from original container not identified by common name. Bread crumbs in in large brute containers. **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Green salsa 41-45°f operator added water to ice bath. **Corrective Action Taken** **Warning**
High Priority - Raw animal food stored over ready-to-eat food. Raw shell eggs over enchilada verde sauce and cooked meat in walk-in cooler. **Warning**
