Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-44-4    Basic - Case/container/bag of food stored on floor in kitchen. Observed metal container with cook oil stored on floor. Observed operator removed at time of inspection.
12B-12-4    Basic - Employee beverage container in a food preparation/clean dishware area does not have a lid and a straw or equivalent dispensing mechanism to prevent hand contact with lip contact area of drink container. Observed plastic bottles of water stored on top of prep counter area. Observed operator discard.
06-06-4    Basic - Frozen potentially hazardous (time/temperature control for safety) food being slacked at room temperature is no longer frozen solid. Observed raw shrimp no longer frozen at a temperature of 80°F. Operator placed shrimp back into reach in freezer. Priority: Basic **Corrective Action Taken**
36-68-4    Basic - Hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling.
10-01-4    Basic - In-use utensil in nonpotentially hazardous (non-time/temperature control for safety) food not stored with handle above top of food. Observed small plastic cup left in a container of rice near fryer station.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed metal container with water Temperature At 78°f holding clean utensils. Operator removed the water from the container .**Corrective Action Taken**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board.
22-19-4    Basic - Interior of microwave soiled with encrusted food debris.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit.
06-05-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed in standing water.
36-02-5    Basic - Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom. Located storage area.
08A-09-4    High Priority - Raw animal food stored over ready-to-eat food in walk-in cooler. Observed raw chicken over cooked ribs stored inside walk in cooler.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Near cook line.
22-05-4    Intermediate - Cutting board(s) stained/soiled.
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products.
