A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Build-up of food debris, dust or dirt on nonfood-contact surface. Exterior of some sauces containers and exterior of walking cooler door. Employee started cleaning . **Corrective Action Taken**
Basic - Case/container/bag of food stored on floor in kitchen. Cooking oil containers on the floor. Owner moved them to a shelf. **Corrected On-Site** **Repeat Violation**
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed some pots and pans stored with food contact surface up in the kitchen shelf. Employee inverted all of them. **Corrected On-Site** **Repeat Violation**
Basic - Equipment and utensils not properly air-dried - wet nesting. Observed accumulation of water residue inside the clean containers. Employee inverted them to eliminate the water. **Corrective Action Taken**
Basic - Single-service articles improperly stored. Observed 8 oz plastic containers bottles used for shakes in a plastic bag on the floor. Employee moved them immediately. **Corrected On-Site** **Repeat Violation**
High Priority - Shell eggs in use or stored with cracks or broken shells. See stop sale. Observed 2 eggs stored with 1 broken shell egg in a container inside reach in cooler ( preparation area). Owner threw them away. **Corrective Action Taken**
Intermediate - Soil residue in food storage containers. Observed food residue inside a container stored on kitchen shelf. Owner sent it to 3 compartment sink. **Corrective Action Taken**
