A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-13-4    Basic - Opened employee beverage container in a cold holding unit with food to be served to customers. Arizona iced tea in fridge near dish area. Energy drinks in reach in cooler under prep table.

23-09-4    Basic - Soiled reach-in cooler gaskets.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Near beverage counter.
21-08-4    Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. 0ppm sanitizer bucket, bucket tube dispenser is clogged. Operator stated they will switch buckets to chlorine.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Squeeze bottles unlabeled, advised operator to label and he complied. **Corrected On-Site**
10-05-4    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit.
03F-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Employee advised pizza was put out around 12:30-22:50pm, wrote stickers and labeled. **Corrective Action Taken** **Repeat Violation**

22-26-4    Intermediate - Buildup of soiled material on racks in the reach-in cooler. Pizza prep area shelves and racks soiled.
02C-03-4    Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Milk open not date marked, operator placed date on. Cooked meat sauce date 6/4 in walk in cooler, date today is 6/13. Operator voluntarily threw away. See stop sale.
