Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. batter binder mix 56° less than 3 hr, cheese 49°, blue cheese 63° Operator iced down binder mix and shut cooler lid on blue cheese and American cheese, lobster in walk in cooler 44°, 45°. Operator iced down lobsters. 2nd reading- batter binder mix 39°, blue cheese,47°, 48°, America cheese 47° , lobster 43°. **Corrective Action Taken**
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Potatoes 132° Operator took double boiler out and set right in steam table. 2nd temperature 166°. **Corrected On-Site**
31A-13-4    Intermediate - Employee used handwash sink as a dump sink. Limes dumped in bar hand wash sink Operator removed during inspection. **Corrected On-Site**
51-16-7    Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 30 days.
