A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Case/container/bag of food stored on floor in walk-in cooler/freezer.
Observed buckets of potatoes on floor in outside walk-in cooler. Advised manager and he moved to shelf. **Corrected On-Site** **Repeat Violation**
Basic - Clean utensils stored between equipment and wall.
Observed spatulas being stored between wall and 3 compartment sink. Advised manager and he removed. **Corrected On-Site**
Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature.
Observed pork loin and raw salmon thawing at room temperature. Advised manager and he moved to walk in cooler. **Corrected On-Site**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
Observed the following foods temperature greater than 41°F;
vegetable mix (68°F - Cold Holding). As per employee for less than 4 hrs)
Advised manager and he moved to ice in order cool down. **Corrective Action Taken**
High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in walk-in cooler.
Observed raw chicken being stored on top of raw pork in walk in cooler. Advised manager and he rearranged. **Corrected On-Site** **Repeat Violation**
High Priority - Toxic substance/chemical stored by or with food.
Observed cleaning supplies being stored next to food in kitchen area. Advised manager and he moved. **Corrected On-Site**
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink.
Observed sanitizer bucket being stored in hand washing sink on front counter. Employee moved it out. **Corrected On-Site**
