A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - -Soiled reach-in cooler gaskets. On prep line.
-Food debris/dust/grease/soil residue on exterior of microwave. Microwaves on prep line.
-Accumulation of food debris/soil residue on handwash sink. Hand was sink on prep line. **Warning**
Basic - -Wall soiled with accumulated grease, food debris, and/or dust. In ware washing area and in food prep area.
-Walk-in cooler/walk-in freezer floor soiled.
-Vents soiled with accumulated dust, or mold-like substance. In women's restroom. **Warning**
Basic - Bulk milk dispenser with dispensing tube longer than one inch protruding from the chilled dispensing head. Manager cut to 1 inch in length. **Corrected On-Site** **Warning**
Basic - Employee personal items stored in or above a food preparation area. Observed employee hat on prep sink and a hoodie on top of oil tank. **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed 3 live flying insects in food prep area landing on food. Observed 1 fly land on beef then land on cheese. Observed 1 fly land on lettuce. See stop sale. Observed 6 live flying insects in ware washing area on dish racks. **Warning**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Observed live 1 flying insect land on lettuce and 1 live flying insect land on beef patty then land on pepper jack cheese. **Warning**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse.
Swiss cheese (48°F - Cold Holding); Pepper jack (50°F - Cold Holding); Beef patties(50°F - Cold Holding); Beef patties (52°F - Cold Holding) **Warning**
Intermediate - Handwash sink used for purposes other than handwashing. Hand wash sink used to hold hose and trash sitting on hand wash sink by ware washing area. Hand wash sink on prep line with food debris and a fork in it. **Warning**
