Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Observed cases of plastic Gatorade bottles on kitchen floor. Observed boxes of hot sauce containers on kitchen floor and boxes containing ketchup on dry storage containers located outside. **Corrected On-Site**
10-12-4    Basic - In-use ice scoop stored on soiled surface between uses. Observed on top of ice machine at kitchen area. **Corrected On-Site**
10-01-4    Basic - In-use utensil in nonpotentially hazardous (non-time/temperature control for safety) food not stored with handle above top of food within a closed container. Observed inside a container of fish mix/flour at kitchen area. **Corrected On-Site**
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Located above kitchen ice machine. **Repeat Violation**
29-49-5    Basic - Observed standing water in bottom of reach-in cooler/reach-in freezer. Located at reach in freezer in front of fryer station/cookline.
03A-05-4    Basic - Potentially hazardous (time/temperature control for safety) food not maintained frozen solid in a freezer. Observed onion rings (43°F - Cold Holding); orka (42°F - Cold Holding) and breaded macaroni and cheese (42°F - Cold Holding), kept inside reach in freezer unit in front of fryer station/cookline.
25-05-4    Basic - Single-service articles improperly stored. Observed boxes of foam containers on kitchen floor.
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Observed a bag of lettuce stored on top a soiled box of raw chicken. **Corrected On-Site**

32-11-5    Intermediate - Lack of toilet tissue at each toilet. Located inside restroom used by food employees and customers. **Corrected On-Site**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager.
