Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Scoops and ladles stored in water at 110°f at steam table facing fryers. **Repeat Violation**
36-26-4    Basic - Wall soiled with accumulated black debris in dishwashing area.
35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. 15 live flies by ware washing area in the kitchen, 5 lives flies by front office away from kitchen,
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. French onion soup 115-137°f on steam table facing fryers, operator adjusted the steam table temperature. **Corrective Action Taken**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. 2 roaches on the wall of the ware washing area. 3 live roaches crawling in commercially packaged croutons in the back dry storage. 1 live roach on wall by dry storage shelves. 2 lives roaches by ceiling above reach-in freezer that faces fryer. 1 live roach crawling away from reach-in freezer in the kitchen.
01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. 4 bags of commercially packaged croutons with live roaches crawling on them
22-27-4    Intermediate - Food-contact surfaces encrusted with grease and/or soil deposits underneath grill on cook line, and warmer equipment along cook line above the flattop.
