Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment
10-01-4    Basic - In-use utensil in nonpotentially hazardous (non-time/temperature control for safety) food not stored with handle above top of food within a closed container. Observed cup in a plastic rice, and beans container. Employee removed cups. **Corrected On-Site**
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Observed light not having missing a shield covering.
14-31-4    Basic - Nonfood-grade bags used in direct contact with food. Observed beef, liver, vegetables, and pork in bags in the chest freezer.
23-09-4    Basic - Soiled reach-in cooler gaskets.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. **Repeat Violation**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Employees placed wet cloths in wet wiping cloths in sanitizing solution. **Corrected On-Site**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed rice, beans and beans in containers not labeled. Employees labeled all containers. **Corrected On-Site**
16-34-4    Intermediate - No quaternary ammonium chemical test kit provided when using quaternary ammonium chemical sanitizer at three-compartment sink/warewashing machine. Employee found quaternary chemical test kit. **Corrected On-Site**
