Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-12-4    Basic - Food stored in holding unit not covered. Observed container with cooked shredded beef not covered in walk in cooler. Manager covered food. **Corrected On-Site**
35B-04-4    Basic - Outer openings of establishment cannot be properly sealed when not in operation. Dry storage (container) outside has holes underneath.
08B-54-4    Basic - Uncovered food stored near sink exposed to splash. Observed uncovered/unprotected pork inside 3-compartment sink and employee washed hands in this sink.
25-02-4    Basic - Unwrapped single-service utensils not presented so that only the handles are touched. Plastic Spoons at front counter.
36-72-4    Basic - Walk-in cooler/walk-in freezer and storage floor soiled.
03B-02-4    High Priority - Cooked meats or poultry hot held at less than 135 degrees Fahrenheit or above. Observed cooked pork at 118° f, cooked fish at 114° f and cooked chicken wings 122° f all in steam table.
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed can of chin peas dented.
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed sausages at front counter (84° f) kept at room temperature.
12A-03-4    Intermediate - Employee washed hands in a sink other than an approved handwash sink. Observed employee washing hands in 3-compartment sink.
